Heating Oil in the Wok
The first step is to heat up your wok to a medium high temperature and then add the oil. You can use more or less oil as you prefer. It is better to use less oil in the cooking and then dip or add a heart healthy oil like a good quality olive oil to the meal after it is cooked than to use a lot of oil during cooking. However, you need to use enough to ensure that the ingredients in the meal cook adequately and do not adhere to the wok. Even a well seasoned wok needs a little oil before each wok recipe is cooked in it.
