Yellow Bell Peppers Cut for the Wok Recipe

For cooking our jumbo shrimp and prawn wok recipes with yellow bell peppers we cut them so that they will be one of the first vegetable ingredients added to the wok in the recipe. We want them still good and firm at the end, so we don't cut them too thin or small. If you want your bell peppers cut very thinly or into very small  pieces, you should add them later in the course of cooking so they do not overcook.

If your bell peppers are flat and thin, then you may also want to add them a little later. Often the commonly available yellow bell peppers are thick (which is fine), but seasonally you may get fresh farmed yellow bell peppers which are thin walled. Just adjust cooking time by when you add them to the wok relative to the other ingredients.
