Frozen Jumbo Shrimp and Prawns

Depending upon where you live, if you can find good (hopefully excellent) quality flash frozen jumbo shrimp and prawns, you may find that they are even fresher than so called 'fresh' jumbo shrimp and prawns sold at your market. These so-called 'fresh shrimp' often have been previously frozen anyway, thawed out for the market, and then presented as 'fresh' when they aren't really fresh at all.

A flash frozen jumbo shrimp or jumbo prawn, frozen right where it was caught or harvested, never un-frozen, and finally quickly thawed by you just before you cook it will rival fresh shrimp and prawns in quality and flavor and will be far superior to never frozen shrimp that have been sitting around for a long time before you see them on your prep-counter. The reason is that unless you are fortunate enough to get truly fresh shrimp or fresh prawns directly after they are caught (or better yet - catch them yourself) most fresh shrimp and prawns even if not previously frozen, thawed, and sold as 'fresh' are really more like 'non frozen shrimp' rather than truly fresh shrimp. They may have been lying around for a long time before you get them. Even if you get fresh shrimp, you still have to transport them and store them yourself until you are ready to eat them which may be a day or two later. All that adds up to time for them to begin to go off - an opportunity never offered to flash frozen shrimp and flash frozen prawns.
