Cooking Prawns in a Wok | Fresh Ginger

Another incredibly healthy and 'good for you in many ways' food with lots of health benefits is fresh ginger. Just as for fresh garlic, don't dismiss ginger if the first few times you find it not be be top quality. Keep hunting for a place to find the good stuff.

Good fresh ginger (like good fresh garlic) should be juicy and flavorful and not bitter.

You don't want your ginger to be too stringy. Ginger can sometimes be like a stringy mass of fibers which are hard to cut, dry, and flavorless. This gives you some good roughage - but it won't give you the great ginger flavor you want in your meal and isn't going to give you the same health benefits which good quality fresh ginger does.

For these wokking jumbo prawn recipes, your preparation of your fresh garlic and fresh ginger isn't very important - as long as you get them into pretty small pieces.  You can smash your fresh ginger as you smash your fresh garlic with the flat side of a cleaver, your wooden spatula or even your fist if you want. You can thinly slice it before smashing it, or you can just peel it and slice it thinly and then mince it a bit. We use about 2/3 the volume of minced ginger as we do garlic in most of our wokked jumbo prawn recipes.
