Heating the wok and adding the oil to the hot wok

First we heat the wok to a moderately hot temperature and then add the oil We always add oil to a hot wok. Sometimes you can see the oil smoking from the heat, but as soon as your add the first ingredients the temperature goes down and that will stop. As long as there is some moisture in the wok recipe ingredients cooking in the wok the temperature will not get too high.
